- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups Lucky Charms marshmallows (separated from the cereal)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
- Add the eggs and vanilla, mixing until well incorporated.
- Whisk together the flour, baking soda, baking powder, and salt in a separate bowl.
- Gradually add dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the Lucky Charms marshmallows, being careful not to crush them.
- Scoop dough onto the prepared baking sheet using a tablespoon or cookie scoop, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until the edges are set but the centers remain soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra marshmallow crunch, press a few marshmallows on top of the dough balls before baking.
- Store cookies in an airtight container at room temperature for up to 5 days.
- You can freeze the dough balls for up to 3 months and bake fresh whenever you want!
