- 3/4 cup Lucky Charms cereal (without marshmallows)
- 3/4 cup Lucky Charms marshmallows, plus extra for topping
- 1/2 cup white chocolate chips (optional, for extra sweetness)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix dry ingredients – In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
- Cream butter and sugars – In a large bowl, beat butter, granulated sugar, and brown sugar together until light and fluffy (about 2 minutes).
- Add egg and extracts – Mix in the egg, vanilla extract, and almond extract until smooth.
- Incorporate dry ingredients – Gradually add the flour mixture, stirring until just combined.
- Fold in mix-ins – Gently mix in the Lucky Charms cereal (without marshmallows), marshmallows, and white chocolate chips (if using).
- Scoop and shape – Drop rounded tablespoons of dough onto the baking sheet, spacing them about 2 inches apart. Press a few extra marshmallows on top for a fun look.
- Bake – Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked but will set as they cool.
- Cool & enjoy – Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- For extra crunch: Add ¼ cup crushed Lucky Charms cereal into the dough.
- Want even softer cookies? Slightly underbake them and let them set on the baking sheet.
