Ingredients

Units Scale

For the Nachos:

  • 1 bag (12 oz) tortilla chips
  • 2 cups shredded cheddar cheese (or a Mexican cheese blend)
  • 1 pound ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup sliced jalapeños (optional)
  • 1/2 cup corn (fresh, canned, or frozen)

For the Toppings:

  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1/2 cup sliced green onions
  • 1 lime, cut into wedges

Instructions

  • Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper.
  • Cook the ground beef in a skillet over medium heat until browned, about 5–7 minutes. Drain excess grease.
  • Add taco seasoning and water to the beef, stirring until well combined. Simmer for 2–3 minutes until thickened.
  • Assemble the nachos: Spread tortilla chips evenly on the prepared baking sheet. Layer with half of the cheese, ground beef, black beans, corn, and red onions. Add the remaining cheese on top.
  • Bake for 10–12 minutes, or until the cheese is fully melted and bubbly.
  • Remove from the oven and top with diced tomatoes, black olives, jalapeños, and fresh cilantro.
  • Serve immediately with sour cream, guacamole, salsa, and lime wedges on the side. Enjoy!

Notes

  • Swap ground beef for shredded chicken, ground turkey, or a plant-based protein for a different twist.
  • Add extra heat with hot sauce or extra jalapeños.
  • Use homemade tortilla chips for an extra crunchy texture.
