For the Nachos:
- 1 bag (12 oz) tortilla chips
- 2 cups shredded cheddar cheese (or a Mexican cheese blend)
- 1 pound ground beef
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup diced red onion
- 1/2 cup diced tomatoes
- 1/2 cup sliced black olives
- 1/2 cup sliced jalapeños (optional)
- 1/2 cup corn (fresh, canned, or frozen)
For the Toppings:
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 1/2 cup sliced green onions
- 1 lime, cut into wedges
Instructions
- Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper.
- Cook the ground beef in a skillet over medium heat until browned, about 5–7 minutes. Drain excess grease.
- Add taco seasoning and water to the beef, stirring until well combined. Simmer for 2–3 minutes until thickened.
- Assemble the nachos: Spread tortilla chips evenly on the prepared baking sheet. Layer with half of the cheese, ground beef, black beans, corn, and red onions. Add the remaining cheese on top.
- Bake for 10–12 minutes, or until the cheese is fully melted and bubbly.
- Remove from the oven and top with diced tomatoes, black olives, jalapeños, and fresh cilantro.
- Serve immediately with sour cream, guacamole, salsa, and lime wedges on the side. Enjoy!

- Swap ground beef for shredded chicken, ground turkey, or a plant-based protein for a different twist.
