  • 1 large head cauliflower, cut into florets
  • 4 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup cream cheese, softened
  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese (for topping)

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  • Steam the cauliflower florets until tender, about 8-10 minutes. Drain any excess water and mash the cauliflower with a potato masher or fork until smooth, but still a little chunky.
  • In a large bowl, mix the mashed cauliflower with the cooked bacon, cheddar cheese, sour cream, cream cheese, melted butter, minced garlic, and green onions. Season with salt and pepper to taste.
  • Transfer the cauliflower mixture to the prepared casserole dish, spreading it out evenly.
  • Top with shredded mozzarella cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and golden.
  • Let it cool for a few minutes before serving. Garnish with extra green onions or bacon, if desired.
