Description

These Lemon Lavender Cookies are light, buttery, and infused with floral lavender and bright lemon zest. Perfect with tea or as an elegant dessert, they offer a delightful balance of citrus and floral flavors!

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 2 cups all-purpose flour
  • 1 tbsp culinary lavender, finely ground
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the Lemon Glaze (Optional):

  • 1 cup powdered sugar
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract

Instructions

Step 1: Prepare the Dough

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, ground lavender, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together butter and sugar until light and fluffy (about 2 minutes).
  4. Add egg, vanilla extract, and lemon zest, mixing until combined.
  5. Gradually add the dry ingredients and mix until a soft dough forms.

Step 2: Shape & Bake

  1. Scoop 1 tbsp of dough and roll into balls. Place on the baking sheet, spacing 2 inches apart.
  2. Gently flatten each dough ball with your palm.
  3. Bake for 10-12 minutes, or until the edges are lightly golden.
  4. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Step 3: Make the Glaze (Optional)

  1. In a small bowl, whisk together powdered sugar, lemon juice, and vanilla until smooth.
  2. Drizzle over cooled cookies and let set before serving.
