Instructions
Step 1: Prepare the Dough
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, ground lavender, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together butter and sugar until light and fluffy (about 2 minutes).
- Add egg, vanilla extract, and lemon zest, mixing until combined.
- Gradually add the dry ingredients and mix until a soft dough forms.
Step 2: Shape & Bake
- Scoop 1 tbsp of dough and roll into balls. Place on the baking sheet, spacing 2 inches apart.
- Gently flatten each dough ball with your palm.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Step 3: Make the Glaze (Optional)
- In a small bowl, whisk together powdered sugar, lemon juice, and vanilla until smooth.
- Drizzle over cooled cookies and let set before serving.
