- 2 lbs Yukon Gold or russet potatoes, peeled and cut into wedges
- 1/4 cup olive oil
- 3 tablespoons lemon juice (freshly squeezed)
- 3 cloves garlic, minced
- 1 teaspoon dried oregano (or 1 tablespoon fresh)
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional, for color)
- 1/2 cup chicken or vegetable broth
For Garnish:
- 2 tablespoons fresh parsley, chopped
- 1/4 cup feta cheese (optional)
Instructions
Prepare the Potatoes:
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or sheet pan.
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
- Toss the potato wedges in the marinade until well coated.
Roast the Potatoes:
- Spread the potatoes in a single layer in the baking dish. Pour chicken broth around them.
- Roast for 40–45 minutes, stirring halfway, until crispy and golden brown.
Serve & Enjoy!
- Garnish with fresh parsley and crumbled feta, if using.
- Serve hot with grilled chicken, lamb, or tzatziki!
Notes
- For extra crispiness, broil for the last 5 minutes.
- Swap Yukon Gold for red potatoes for a firmer texture.
