Description

These crispy, golden Greek-style potatoes are roasted in a flavorful lemon-garlic marinade, making them the perfect side dish for any Mediterranean meal!


Ingredients

  • 2 lbs Yukon Gold or russet potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano (or 1 tablespoon fresh)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional, for color)
  • 1/2 cup chicken or vegetable broth
For Garnish:

  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup feta cheese (optional)

Instructions

Prepare the Potatoes:
  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish or sheet pan.
  2. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
  3. Toss the potato wedges in the marinade until well coated.
Roast the Potatoes:
  1. Spread the potatoes in a single layer in the baking dish. Pour chicken broth around them.
  2. Roast for 40–45 minutes, stirring halfway, until crispy and golden brown.
Serve & Enjoy!

  1. Garnish with fresh parsley and crumbled feta, if using.
  2. Serve hot with grilled chicken, lamb, or tzatziki!

Notes

  • For extra crispiness, broil for the last 5 minutes.
  • Swap Yukon Gold for red potatoes for a firmer texture.
  • Add a sprinkle of lemon zest for even more citrus flavor!
