These crispy, golden cheese puffs are the perfect way to turn leftover mashed potatoes into a fun and tasty snack or side dish. Light, cheesy, and made in a muffin tin, they’re crispy on the outside and soft and fluffy on the inside!
Ingredients

2 cups cold leftover mashed potatoes

2 large eggs

3/4 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions (optional)

Salt and pepper, to taste

Nonstick cooking spray or melted butter (for greasing)
Instructions

Preheat your oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with nonstick spray or melted butter.

In a large mixing bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan, green onions (if using), salt, and pepper. Mix well until fully combined.

Scoop the mixture evenly into the prepared muffin tin, filling each cup about ¾ full.

Bake for 20–25 minutes, or until the tops are golden and slightly crispy.

Let cool for 5 minutes in the tin, then gently remove with a spoon or butter knife. Serve warm!
