Description

These crispy, golden cheese puffs are the perfect way to turn leftover mashed potatoes into a fun and tasty snack or side dish. Light, cheesy, and made in a muffin tin, they’re crispy on the outside and soft and fluffy on the inside!


Ingredients

  • 2 cups cold leftover mashed potatoes

  • 2 large eggs

  • 3/4 cup shredded sharp cheddar cheese

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup chopped green onions (optional)

  • Salt and pepper, to taste

 

  • Nonstick cooking spray or melted butter (for greasing)


Instructions

  • Preheat your oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with nonstick spray or melted butter.

  • In a large mixing bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan, green onions (if using), salt, and pepper. Mix well until fully combined.

  • Scoop the mixture evenly into the prepared muffin tin, filling each cup about ¾ full.

  • Bake for 20–25 minutes, or until the tops are golden and slightly crispy.

 

  • Let cool for 5 minutes in the tin, then gently remove with a spoon or butter knife. Serve warm!


Notes

  • These are great as a side dish, breakfast item, or appetizer.

  • Add crumbled bacon or chopped ham for extra flavor.

 

  • Can be made ahead and reheated in the oven or air fryer for a crispy finish.
