Description

A quick and easy version of classic pecan pie, these bars have a soft, buttery crust and a rich, caramelized pecan filling. No rolling out dough required!


Ingredients

For the Crust:
  • 1 box (about 1516 oz) yellow cake mix
  • 1/2 cup (113g) unsalted butter, melted
  • 1 large egg
For the Pecan Filling:

 

  • 3/4 cup (150g) brown sugar, packed
  • 1/2 cup (120ml) light corn syrup (or maple syrup)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 cups (170g) chopped pecan

Instructions

Prepare the Crust

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it well.
  2. In a medium bowl, mix together cake mix, melted butter, and egg until combined. The dough will be thick.
  3. Press the dough evenly into the bottom of the prepared baking pan.

2. Bake the Crust

  1. Bake for 10 minutes, just until slightly set. Remove from the oven and set aside.

3. Make the Pecan Filling

  1. In a large bowl, whisk together brown sugar, corn syrup, eggs, vanilla, and salt until smooth.
  2. Stir in the chopped pecans.

4. Bake the Bars

  1. Pour the pecan mixture over the pre-baked crust, spreading evenly.
  2. Return to the oven and bake for 20-25 minutes, or until the filling is set but still slightly gooey.
  3. Let cool completely before slicing into bars.

5. Serve & Enjoy!

  1. Cut into squares and serve as-is or with a scoop of vanilla ice cream!

Notes

No cake mix? Substitute with 2 cups all-purpose flour, ½ cup sugar, 1 tsp baking powder, and a pinch of salt.

Want extra crunch? Use whole pecan halves on top for a pretty finish.

Make ahead: Store in an airtight container at room temp for 3 days or refrigerate for up to a week.
