Description

This Layered Cranberry Gelatin Salad is a beautiful, multi-layered dish featuring a tart cranberry base, a creamy middle layer, and a fruity gelatin topping. It’s a must-have for Thanksgiving, Christmas, or any special occasion!

  • For the Cranberry Layer:
  • 1 package (6 oz) raspberry or cranberry gelatin (Jell-O)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 can (14 oz) whole-berry cranberry sauce
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped pecans or walnuts (optional)
  • For the Creamy Layer:
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the Top Gelatin Layer:
  • 1 package (3 oz) orange or lemon gelatin
  • 1 cup boiling water
  • 1/2 cup cold water

Instructions

  • Step 1: Make the Cranberry Layer
  • In a large bowl, dissolve the cranberry gelatin in 1 cup of boiling water. Stir until completely dissolved.
  • Add ½ cup cold water and mix well. Stir in the cranberry sauce, pineapple, and nuts.
  • Pour into a lightly greased 9×13-inch dish or a gelatin mold. Refrigerate for 1 hour, or until slightly set.
  • Step 2: Make the Creamy Layer
  • In a bowl, beat together cream cheese, sour cream, powdered sugar, and vanilla until smooth.
  • Gently spread over the chilled cranberry layer. Return to the fridge for 30 minutes.
  • Step 3: Make the Top Gelatin Layer
  • In a clean bowl, dissolve the orange or lemon gelatin in 1 cup boiling water. Add ½ cup cold water and let cool for 5 minutes.
  • Carefully pour over the creamy layer. Refrigerate for at least 4 hours, or until fully set.
  • Step 4: Serve & Enjoy
  • Slice and serve chilled. Garnish with whipped cream and fresh cranberries if desired!

  • For a mold shape, lightly grease the mold before adding gelatin layers.
  • Make ahead: Can be made up to 2 days in advance.
  • Try different flavors! Swap raspberry gelatin for cherry or strawberry.
