Description

A fast and flavorful dish made with seasoned ground beef, served over rice, and topped with fresh garnishes. Sweet, savory, and slightly spicy, this dish comes together in under 30 minutes!


Ingredients

  • 1 lb ground beef (85% lean)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1/2 tsp crushed red pepper flakes (adjust to taste)
  • 1 tbsp rice vinegar
  • 2 green onions, sliced (plus more for garnish)
  • 1 tsp toasted sesame seeds (for garnish)
  • 3 cups cooked white or brown rice
  • 1 small cucumber, thinly sliced (optional)

 

  • 1 medium carrot, shredded (optional)

Instructions

  • Cook the Beef – Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon (about 5–7 minutes). Drain any excess fat if needed.
  • Add Flavor – Stir in the minced garlic and ginger. Cook for another minute until fragrant.
  • Make the Sauce – In a small bowl, whisk together soy sauce, brown sugar, sesame oil, red pepper flakes, and rice vinegar. Pour the sauce over the beef and stir well. Simmer for 2–3 minutes until the sauce thickens slightly.
  • Assemble the Bowls – Divide the cooked rice into bowls. Spoon the Korean beef mixture on top. Garnish with sliced green onions, sesame seeds, cucumber, and shredded carrot if using.

Notes

  • For extra spice, drizzle with sriracha or gochujang (Korean chili paste).
  • Swap ground beef for ground turkey or chicken for a leaner option.
