Description

This Juicy Oven-Baked Chicken Breasts recipe is the perfect way to get tender, flavorful chicken every time. With a simple seasoning blend and the right baking method, these chicken breasts stay moist and delicious. Perfect for meal prep, salads, sandwiches, or a quick dinner!

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1.5 lbs total)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp Italian seasoning (optional)

  • 1/2 tsp lemon zest (optional, for extra freshness)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C).
    • Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Chicken:

    • Pat the chicken breasts dry with paper towels.
    • Place them in a bowl or on the baking sheet.
  3. Season the Chicken:

    • Drizzle olive oil over the chicken and rub it in.
    • In a small bowl, mix the salt, pepper, garlic powder, onion powder, smoked paprika, and Italian seasoning.
    • Sprinkle the seasoning mixture evenly over both sides of the chicken and rub it in.
  4. Bake the Chicken:

    • Arrange the chicken breasts on the prepared baking sheet.
    • Bake for 18-22 minutes, or until the internal temperature reaches 165°F (75°C).
    • (For extra juiciness, remove from the oven at 160°F and let it rest—it will reach 165°F as it sits.)
  5. Rest & Serve:

    • Let the chicken rest for 5 minutes before slicing.
    • Serve warm, or store for meal prep.

Notes

  • Use an instant-read thermometer to avoid overcooking.
  • Brining Tip: For extra juicy chicken, soak the breasts in salted water (¼ cup salt + 4 cups water) for 30 minutes before cooking.
  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.

  • Serving Ideas: Serve with roasted vegetables, rice, salad, or use in wraps and sandwiches.
