Description

  • 2 lbs ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 1 can (4 oz) diced green chilies
  • 2 cups sour cream
  • 1 cup mayonnaise
  • 1 cup cheddar cheese, shredded (plus extra for topping)
  • 1 cup Monterey Jack cheese, shredded
  • 1 can (8 oz) Pillsbury refrigerated biscuits
  • 1 packet (1 oz) ranch dressing mix
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Cook the ground beef in a large skillet over medium heat until browned. Drain any excess grease.
  • Add taco seasoning and ½ cup of water to the ground beef, stirring until well combined. Cook for another 2-3 minutes.
  • Stir in diced tomatoes, bell pepper, onion, and green chilies. Let the mixture simmer for 5 minutes until vegetables soften.
  • Layer the biscuits on the bottom of the prepared baking dish, covering as much of the surface as possible. Lightly press them down to flatten.
  • Spread the beef mixture evenly over the biscuit layer.
  • In a separate bowl, mix the sour cream, mayonnaise, ranch dressing mix, salt, and black pepper. Spread this mixture over the beef layer.
  • Top with shredded cheddar and Monterey Jack cheeses.
  • Bake for 30-35 minutes or until the cheese is melted, bubbly, and golden brown.
  • Let cool for 5 minutes before serving. Garnish with extra cheese or chopped green onions if desired.

Notes

  • For extra flavor, you can add jalapeños, black olives, or even corn to the beef mixture.
  • You can substitute the biscuit dough with a crescent roll sheet for a flakier texture.
