- 1 cup shredded Gruyère cheese (plus extra for topping)

- Caramelize the Onions: Melt butter in a large skillet over medium heat. Add onions, sugar, and salt. Cook, stirring occasionally, until onions are deeply golden and jammy (about 25-30 minutes). Stir in balsamic vinegar and thyme; cook for another 2-3 minutes. Remove from heat.
- Prepare the Dip Base: In a large mixing bowl, combine sour cream, cream cheese, Gruyère, mozzarella, garlic powder, and black pepper. Stir until well mixed.
- Combine: Fold in the caramelized onions and mix well.
- Bake: Preheat oven to 350°F (175°C). Transfer mixture to a baking dish, sprinkle with extra Gruyère, and bake for 20-25 minutes until bubbly and golden brown on top.
- Serve: Garnish with parsley and serve warm with toasted bread, crackers, or veggies.
