8 cups chicken broth

2 cups cooked, shredded chicken (rotisserie or leftover works great)

2 cups egg noodles or small pasta (like ditalini or orzo)

2 cups fresh spinach or kale (optional)

Instructions

In a large soup pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until veggies are softened.
