Description

Italian Style Chicken Noodle Soup is a hearty, herb-packed version of the classic comfort dish. Loaded with tender chicken, pasta, and veggies in a savory Italian-seasoned broth, it’s the perfect cozy bowl for chilly nights or when you need a simple, satisfying meal.

 


Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 3 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon dried basil

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • 8 cups chicken broth

  • 2 cups cooked, shredded chicken (rotisserie or leftover works great)

  • 2 cups egg noodles or small pasta (like ditalini or orzo)

  • Salt and pepper, to taste

  • 2 cups fresh spinach or kale (optional)

  • Juice of 1/2 lemon (optional, for brightness)

 

  • Fresh parsley or grated Parmesan, for topping


Instructions

  1. In a large soup pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until veggies are softened.

  2. Stir in garlic, Italian seasoning, basil, and red pepper flakes. Cook for 1 more minute.

  3. Pour in chicken broth and bring to a boil. Add pasta and cook according to package directions until al dente.

  4. Stir in cooked chicken and simmer for 5 minutes to heat through.

  5. If using, add spinach or kale and cook until wilted.

  6. Season with salt, pepper, and lemon juice to taste.

  7. Serve hot, topped with parsley and Parmesan if desired.


Notes

  • For extra flavor, add a Parmesan rind while the soup simmers.

  • Make it gluten-free by using gluten-free pasta.

  • Great for meal prep – just cook the noodles separately if storing to avoid them getting mushy.
