Description

These soft and buttery Italian Easter Cookies are lightly sweet, flavored with vanilla and a hint of citrus, and topped with a sweet glaze and festive sprinkles. They are a beloved Easter tradition in many Italian households and pair perfectly with a cup of coffee or tea!

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract (optional)
  • 1 tablespoon lemon zest (or orange zest)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons milk

For the Glaze:

 

  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Food coloring (optional)
  • Easter sprinkles

Instructions

Preheat & Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix the Wet Ingredients: In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well. Stir in vanilla extract, almond extract (if using), and lemon zest.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

Make the Dough: Gradually add the dry ingredients to the wet mixture, alternating with the milk, until a soft dough forms. The dough should be slightly sticky but manageable.

Shape the Cookies: Lightly flour your hands and roll tablespoon-sized pieces of dough into small logs (about 4 inches long). Twist them into rings or simple knots. Place on the prepared baking sheet.

Bake: Bake for 10-12 minutes, or until the cookies are set and lightly golden. Let them cool completely.

Make the Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Add food coloring if desired.

Glaze & Decorate: Dip each cooled cookie into the glaze and place them on a wire rack. Sprinkle with colorful Easter sprinkles and let the glaze set.
