Description
Irish Potato Farls are soft, buttery potato flatbreads, traditionally made with leftover mashed potatoes and cooked on a griddle. They are a staple of an Ulster Fry breakfast but also pair wonderfully with butter, jam, or savory toppings.

- 2 cups mashed potatoes (preferably leftover and cooled)
- 1/2 cup all-purpose flour (plus extra for dusting)
- 2 tbsp unsalted butter, melted
- 1/2 tsp salt
- 1/2 tsp baking powder (optional, for fluffier farls)
- Butter or oil, for frying
Instructions
Prepare the Dough:
- In a bowl, mix mashed potatoes, flour, melted butter, salt, and baking powder (if using) until a soft dough forms.
- Lightly flour a clean surface and turn out the dough. Knead briefly until smooth.
2. Shape the Farls:
- Roll the dough into a ½-inch thick circle.
- Cut into four equal triangles (farls).
3. Cook the Farls:
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Cook each farl for 3-4 minutes per side until golden brown and lightly crispy.
- Remove from heat and keep warm under a clean towel.
4. Serve & Enjoy:
- Serve warm with butter, jam, or cheese.
- Pair with an Ulster Fry (bacon, eggs, and sausage) for a hearty breakfast.
Notes
- Make it extra crispy by frying in a little more butter.
- For a richer flavor, replace some of the flour with oat flour.
- Leftovers? Reheat in a pan or toaster for a quick snack.
