Description

Irish Potato Farls are soft, buttery potato flatbreads, traditionally made with leftover mashed potatoes and cooked on a griddle. They are a staple of an Ulster Fry breakfast but also pair wonderfully with butter, jam, or savory toppings.


Ingredients

  • 2 cups mashed potatoes (preferably leftover and cooled)
  • 1/2 cup all-purpose flour (plus extra for dusting)
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp salt
  • 1/2 tsp baking powder (optional, for fluffier farls)

 

  • Butter or oil, for frying

Instructions

Prepare the Dough:

  1. In a bowl, mix mashed potatoes, flour, melted butter, salt, and baking powder (if using) until a soft dough forms.
  2. Lightly flour a clean surface and turn out the dough. Knead briefly until smooth.

2. Shape the Farls:

  1. Roll the dough into a ½-inch thick circle.
  2. Cut into four equal triangles (farls).

3. Cook the Farls:

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  2. Cook each farl for 3-4 minutes per side until golden brown and lightly crispy.
  3. Remove from heat and keep warm under a clean towel.

4. Serve & Enjoy:

 

  • Serve warm with butter, jam, or cheese.
  • Pair with an Ulster Fry (bacon, eggs, and sausage) for a hearty breakfast.

Notes

  • Make it extra crispy by frying in a little more butter.
  • For a richer flavor, replace some of the flour with oat flour.
