Description

This sweet and fruity breakfast casserole is made with soft bread, juicy berries, and a rich cinnamon-vanilla custard. Perfect for weekend brunch, meal prep, or special occasions, this dish can even be made overnight for an easy morning bake!


Ingredients

  • 1 loaf French bread (or brioche, challah), cut into 1-inch cubes
  • 1 1/2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 6 large eggs
  • 2 cups milk (or half-and-half for extra richness)
  • 1/2 cup maple syrup (or brown sugar)
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp butter, melted

Optional Toppings:

  • Powdered sugar
  • Extra maple syrup
  • Whipped cream
  • Chopped nuts (almonds, pecans)

Instructions

 Prepare the Bread & Berries

  1. Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Spread half the bread cubes into the dish, then sprinkle with half the berries.
  3. Layer the remaining bread cubes on top, followed by the rest of the berries.

2. Make the Custard

  1. In a large bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, and salt.
  2. Pour the custard evenly over the bread, pressing down slightly to ensure it soaks in.
  3. Cover and let sit for 30 minutes, or refrigerate overnight for a richer flavor.

3. Bake the Casserole

  1. Preheat oven to 375°F (190°C).
  2. Drizzle melted butter over the top.
  3. Bake uncovered for 40-45 minutes, until golden brown and set.

4. Serve & Enjoy

  1. Let cool for 5 minutes, then dust with powdered sugar and drizzle with maple syrup. Serve warm!
