- 1/4 cup brown sugar
- 1 tablespoon granulated sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon unsalted butter
- For the Turnovers:
- 1 sheet frozen puff pastry, thawed
- 1 egg (for egg wash)
- 1 tablespoon water
- For the Glaze (Optional):
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract

- Step 1: Make the Apple Filling
- Cook the apples: In a small saucepan, melt butter over medium heat. Add apples, sugars, cinnamon, nutmeg, lemon juice, and cornstarch.
- Simmer: Cook for 5-7 minutes until the apples soften and the mixture thickens. Let cool.
- Step 2: Prepare the Pastry
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry: Lightly flour a surface and roll out the puff pastry. Cut into 4 equal squares.
- Fill the turnovers: Spoon 2 tablespoons of apple filling onto one side of each square.
- Fold & seal: Fold the pastry diagonally into a triangle. Press the edges with a fork to seal.
- Egg wash: Whisk the egg and water together, then brush over the turnovers.
- Step 3: Bake
- Bake for 18-20 minutes, or until golden brown and puffed up. Let cool for 5 minutes.
- Step 4: Glaze & Serve
- Make the glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm turnovers.
