Description

These grilled lamb chops are juicy, flavorful, and incredibly easy to make. With a simple marinade and a hot grill, you’ll have restaurant-quality chops in under 30 minutes. Perfect for a quick weeknight dinner or a weekend barbecue!


Ingredients

  • 8 lamb loin chops or rib chops (about 1 inch thick)

  • 3 tablespoons olive oil

  • 2 tablespoons fresh rosemary, finely chopped (or 1 tbsp dried)

  • 4 garlic cloves, minced

  • 1 tablespoon lemon juice

  • 1 teaspoon salt

 

  • 1/2 teaspoon black pepper


Instructions

  • Marinate the lamb chops: In a small bowl, mix olive oil, rosemary, garlic, lemon juice, salt, and pepper. Rub the mixture over the lamb chops and place them in a zip-top bag or shallow dish. Let them marinate for at least 30 minutes (or up to 4 hours) in the fridge.

  • Preheat the grill: Heat your grill to medium-high (about 400–450°F). Clean and oil the grates.

  • Grill the chops: Remove lamb from the marinade and let excess drip off. Grill for about 3–4 minutes per side for medium-rare, or until desired doneness.

 

  • Rest before serving: Remove chops from the grill and let them rest for 5 minutes before serving. This helps the juices redistribute for tender meat.


Notes

  • For extra flavor, marinate overnight.

  • A meat thermometer is helpful—aim for 135°F for medium-rare.

  • Serve with grilled vegetables, mashed potatoes, or a fresh salad.
