Instructions

Marinate the lamb chops: In a small bowl, mix olive oil, rosemary, garlic, lemon juice, salt, and pepper. Rub the mixture over the lamb chops and place them in a zip-top bag or shallow dish. Let them marinate for at least 30 minutes (or up to 4 hours) in the fridge.

Grill the chops: Remove lamb from the marinade and let excess drip off. Grill for about 3–4 minutes per side for medium-rare, or until desired doneness.
