Description

This Hot Girl Summer Salad is the ultimate crunchy, refreshing salad that blew up on TikTok. It’s made with chopped cucumbers, green bell peppers, red onions, and tangy banana peppers, all tossed in a zesty dressing with a hint of spice. It’s low in calories, full of fiber, and super satisfying—perfect for summer snacking or a light lunch.

Ingredients

  • 2 large cucumbers, diced

  • 2 green bell peppers, diced

  • 1/2 red onion, finely diced

  • 1/2 cup banana pepper rings (mild or hot, depending on preference)

  • 1/4 cup banana pepper juice (from the jar)

  • 1/4 cup olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon black pepper

  • Salt to taste

  • Optional: red pepper flakes or chopped jalapeños for heat

Instructions

  1. Add diced cucumbers, bell peppers, and red onion to a large mixing bowl.

  2. Toss in the banana pepper rings.

  3. In a small bowl, whisk together the banana pepper juice, olive oil, vinegar, mustard, and seasonings.

  4. Pour the dressing over the vegetables and toss until everything is evenly coated.

  5. Chill in the fridge for at least 30 minutes before serving for best flavor.

  6. Taste and adjust seasoning if needed. Serve cold!

Notes

  • This salad keeps well in the fridge for up to 3 days.

  • You can swap green bell peppers for red or yellow for a sweeter flavor.

  • Add grilled chicken or chickpeas to make it a full meal.

  • For extra crunch, toss in some sunflower seeds or roasted chickpeas before serving.
