- 1 lb (450g) rainbow carrots, peeled and trimmed
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tbsp melted butter (or more olive oil for dairy-free)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 1/2 tsp dried thyme or rosemary
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the carrots: If they are large, slice them in half lengthwise for even cooking.
- Make the glaze: In a small bowl, mix olive oil, honey, melted butter, salt, pepper, garlic powder, and thyme.
- Coat the carrots: Toss the carrots with the glaze until fully coated.
- Roast: Spread them out on the baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway through, until tender and caramelized.
- Garnish & serve: Sprinkle with fresh parsley and serve warm.
Notes
- For extra crispiness, broil the carrots for the last 2-3 minutes.
- Swap honey for maple syrup to make it vegan.
- Great with a squeeze of lemon juice before serving for added freshness.
