Description

These honey-roasted colorful carrots are tender, caramelized, and packed with flavor. A simple blend of honey, butter, and herbs brings out their natural sweetness, making them the perfect side dish for any meal.


Ingredients

  • 1 lb (450g) rainbow carrots, peeled and trimmed
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp melted butter (or more olive oil for dairy-free)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp dried thyme or rosemary
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare the carrots: If they are large, slice them in half lengthwise for even cooking.
  • Make the glaze: In a small bowl, mix olive oil, honey, melted butter, salt, pepper, garlic powder, and thyme.
  • Coat the carrots: Toss the carrots with the glaze until fully coated.
  • Roast: Spread them out on the baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway through, until tender and caramelized.
  • Garnish & serve: Sprinkle with fresh parsley and serve warm.

Notes

  • For extra crispiness, broil the carrots for the last 2-3 minutes.
  • Swap honey for maple syrup to make it vegan.
  • Great with a squeeze of lemon juice before serving for added freshness.
