Description

Golden roasted potatoes coated in a delicious honey mustard glaze—an easy and flavorful side dish for any meal!

 


Ingredients

2 lbs baby potatoes (halved or quartered if large)

2 tbsp olive oil

2 tbsp honey

2 tbsp Dijon mustard (or whole-grain mustard)

1 tsp apple cider vinegar (or lemon juice)

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp salt (or to taste)

1/4 tsp black pepper

1 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the Oven – Set to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Glaze – In a small bowl, whisk together olive oil, honey, mustard, vinegar, garlic powder, paprika, salt, and black pepper.
  3. Coat the Potatoes – In a large bowl, toss the potatoes with the honey mustard glaze until well coated.
  4. Roast – Spread the potatoes in a single layer on the prepared baking sheet. Roast for 30-35 minutes, stirring halfway through, until golden and crispy.
  5. Serve – Garnish with fresh parsley and serve warm!

Notes

  • Use red, Yukon Gold, or baby potatoes for the best texture.
  • For extra crispiness, broil for the last 2-3 minutes.
  • Add crumbled feta or Parmesan for extra flavor!
