Description

These Honey Glazed Roasted Baby Carrots are tender, caramelized, and full of flavor! Roasted to perfection with honey, butter, and a touch of seasoning, they make a simple yet elegant side dish for Easter, Thanksgiving, or any weeknight dinner.

  • 1 lb (450g) baby carrots
  • 2 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp cinnamon (optional, for warmth)
  • 1 tsp fresh thyme or parsley (for garnish)

Instructions

  • Preheat oven:

    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or foil.
  • Prepare the glaze:

    • In a small bowl, whisk together melted butter, honey, olive oil, salt, pepper, and optional garlic powder or cinnamon.
  • Coat the carrots:

    • Place baby carrots on the baking sheet.
    • Drizzle with the honey butter mixture and toss to coat evenly.
  • Roast:

    • Spread carrots in a single layer.
    • Roast for 20-25 minutes, stirring halfway, until tender and caramelized.

 

  • Garnish & serve:

    • Sprinkle with fresh thyme or parsley before serving.

Notes

  • Extra Crispy: Roast at 425°F (220°C) for more caramelization.
  • Make It Vegan: Use maple syrup instead of honey and swap butter for vegan butter.
