Description

These Honey Chipotle Grilled Chicken Skewers are the perfect mix of sweet, smoky, and spicy. Juicy chicken pieces are marinated in a bold honey-chipotle sauce and grilled to perfection. Great for BBQs, weeknight dinners, or meal prep.


Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes

  • 3 tablespoons olive oil

  • 2 tablespoons honey

  • 2 tablespoons lime juice

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon soy sauce

  • 2 chipotle peppers in adobo sauce, finely chopped

  • 1 tablespoon adobo sauce (from the chipotle can)

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • Wooden or metal skewers

 

  • Fresh chopped cilantro and lime wedges (for serving)

Notes

  • You can adjust the spice level by using fewer chipotle peppers.
