- 1 cup creamy peanut butter (natural or regular)
- 1/2 cup unsalted butter (softened)
- 3/4 cup brown sugar (packed)
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat & Prepare:
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Mix Wet Ingredients:
- In a large bowl, beat together butter, peanut butter, brown sugar, and granulated sugar until creamy.
- Add egg and vanilla extract, mixing until combined.
- Add Dry Ingredients:
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually mix into the wet ingredients until a dough forms.
- Shape the Cookies:
- Scoop tablespoon-sized dough balls onto the baking sheet.
- Use a fork to press a crisscross pattern on each cookie.
- Bake:
- Bake for 10–12 minutes, until edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes
- For extra chewiness, add 1 extra egg yolk.
- For crunchier cookies, bake for 12–14 minutes.
- Make them chocolatey: Stir in ½ cup chocolate chips!
