Description
A simple, delicious peach jam made with fresh peaches, sugar, and lemon juice. No pectin needed!

- 4 cups fresh peaches, peeled and diced (about 6 large peaches)
- 1 1/2 cups granulated sugar
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract (optional, for extra flavor)
Instructions
- 1. Prepare the Peaches:
- Bring a pot of water to a boil. Cut a small “X” on the bottom of each peach and blanch them for 30 seconds.
- Transfer peaches to an ice bath, then peel, pit, and dice them.
- 2. Cook the Jam:
- 3. In a large saucepan, combine peaches, sugar, and lemon juice. Stir well.
- 4. Cook over medium heat, stirring frequently, until the mixture thickens (25-30 minutes).
- 5. Use a potato masher or spoon to break down the peaches to your desired consistency.
- 6. Stir in vanilla extract, if using.
- 3. Test for Doneness:
- 7. Place a small spoonful of jam on a chilled plate. If it wrinkles when pushed with your finger, it’s ready. If not, cook for a few more minutes and test again.
- 4. Store the Jam:
- 8. Pour hot jam into sterilized jars, leaving ¼ inch of space at the top. Seal and let cool.
- 9. Store in the fridge for up to 3 weeks or process in a water bath for longer storage.
Notes
- For smoother jam, blend the peaches before cooking.
- For a thicker jam, add 1 tbsp cornstarch mixed with 1 tbsp water.
- To store longer, process jars in a boiling water bath for 10 minutes.
