- 1 cup skim milk (or unsweetened almond milk for dairy-free option)
- 3/4 cup unsweetened almond milk
- 2 tbsp sugar-free pistachio pudding mix
- 1 scoop vanilla protein powder
- 1 tbsp powdered sweetener (monk fruit or stevia)
- 2 tbsp raw pistachios, chopped
Instructions

- In a blender, combine the skim milk, almond milk, pistachio pudding mix, protein powder, and sweetener. Blend until smooth.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- In the last few minutes of churning, mix in the chopped pistachios.
- Transfer to a freezer-safe container and freeze for at least 2 hours until firm.
- Let sit at room temperature for a few minutes before serving for easier scooping.

- For a vegan version, use plant-based protein powder and substitute skim milk with more almond milk.
- If you don’t have an ice cream maker, freeze the mixture in a shallow container, stirring every 30 minutes until desired consistency is reached.
