Description

This high-protein pistachio ice cream is a delicious and healthy twist on a classic dessert. Made with protein powder, almond milk, and real pistachios, it’s creamy, flavorful, and packed with nutrients.


Ingredients

  • 1 cup skim milk (or unsweetened almond milk for dairy-free option)
  • 3/4 cup unsweetened almond milk
  • 2 tbsp sugar-free pistachio pudding mix
  • 1 scoop vanilla protein powder
  • 1 tbsp powdered sweetener (monk fruit or stevia)
  • 2 tbsp raw pistachios, chopped

Instructions

  • In a blender, combine the skim milk, almond milk, pistachio pudding mix, protein powder, and sweetener. Blend until smooth.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  • In the last few minutes of churning, mix in the chopped pistachios.
  • Transfer to a freezer-safe container and freeze for at least 2 hours until firm.
  • Let sit at room temperature for a few minutes before serving for easier scooping.

Notes

  • For a vegan version, use plant-based protein powder and substitute skim milk with more almond milk.
  • If you don’t have an ice cream maker, freeze the mixture in a shallow container, stirring every 30 minutes until desired consistency is reached.
  • You can adjust sweetness by adding more or less sweetener.
