Description

This quick and flavorful hibachi-style chicken is seared to perfection and paired with buttery sautéed vegetables. Serve it with fried rice and the classic yum yum sauce for a delicious Japanese steakhouse experience at home!


Ingredients

For the Chicken:
  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp soy sauce (low sodium)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sesame oil
  • 1 tsp garlic powder
  • 1/2 tsp ginger powder (or 1 tsp fresh grated ginger)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Hibachi Vegetables:
  • 1 zucchini, sliced into half-moons
  • 1 onion, sliced
  • 1 carrot, julienned
  • 1 cup mushrooms, sliced
  • 1 tbsp soy sauce
  • 1 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp sesame oil
For the Yum Yum Sauce:

 

  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp sriracha (optional, for spice)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tbsp melted butter
  • 1 tbsp water (to thin it out)

Instructions

  • Cook the Chicken:

    • Heat olive oil and sesame oil in a large skillet or griddle over medium-high heat.
    • Add the chicken, then season with garlic powder, ginger, salt, and pepper.
    • Sear for 4–5 minutes, stirring occasionally, until golden brown and fully cooked.
    • Add butter and soy sauce, stirring to coat. Cook for another 1–2 minutes, then remove from heat.
  • Cook the Vegetables:

    • In the same pan, add butter and sesame oil.
    • Toss in the zucchini, onion, carrot, and mushrooms. Stir-fry for 5–6 minutes until tender.
    • Add soy sauce and garlic powder, stirring for another 1–2 minutes. Remove from heat.
  • Make the Yum Yum Sauce:

    • In a small bowl, whisk together mayonnaise, ketchup, sriracha, garlic powder, paprika, melted butter, and water.
    • Chill for at least 10 minutes before serving.

 

  • Serve & Enjoy:

    • Plate the chicken and vegetables with white rice or fried rice.
    • Drizzle with yum yum sauce and enjoy your homemade hibachi meal!

Notes

  • Want extra flavor? Add a splash of teriyaki sauce or a squeeze of fresh lemon juice before serving.
  • For more heat, increase the sriracha in the yum yum sauce.
