Description

These Rotel Cream Cheese Sausage Balls are a delicious twist on classic sausage balls! They’re packed with creamy cheese, spicy Rotel tomatoes, and savory sausage, making them the perfect party appetizer or snack. Easy to make with just a few ingredients, these bite-sized treats are always a crowd favorite!


Ingredients

  • 1 lb (16 oz) pork sausage (mild or spicy)
  • 8 oz cream cheese, softened
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups Bisquick baking mix

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, combine the sausage and softened cream cheese. Mix until well incorporated.
  • Add the drained Rotel, shredded cheddar cheese, and Bisquick. Stir until evenly combined.
  • Roll the mixture into 1-inch balls and place them on the prepared baking sheet, spacing them about an inch apart.
  • Bake for 20–25 minutes, or until golden brown and cooked through.
  • Remove from the oven and let them cool for a few minutes before serving.

Notes

  • Use spicy sausage for an extra kick!
  • If the mixture is too sticky, chill it for 15–20 minutes before rolling into balls.
  • Serve with ranch dressing, honey mustard, or spicy mayo for dipping.
  • Leftovers can be stored in an airtight container in the fridge for 3–4 days or frozen for up to 3 months.
