Instructions

  • Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

  • Brown the Beef: Add the ground beef to the pot. Cook, breaking it apart with a spoon, until it’s browned and no longer pink. Drain any excess fat if necessary.

  • Add Vegetables and Seasonings: Stir in the diced potatoes, mixed vegetables, Italian seasoning, and bay leaf. Season with salt and black pepper to taste.

  • Incorporate Liquids: Pour in the beef broth, diced tomatoes with their juices, condensed tomato soup, and Worcestershire sauce. Stir well to combine all ingredients.

  • Simmer the Soup: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes, or until the potatoes and vegetables are tender.

  • Final Seasoning: Taste the soup and adjust seasoning as needed. Remove the bay leaf before serving.
