For the Cake:
- 1 cup (240ml) Guinness beer
- 1 cup (226g) unsalted butter
- 3/4 cup (75g) unsweetened cocoa powder
- 2 cups (250g) all-purpose flour
- 2 cups (400g) granulated sugar
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 2/3 cup (160g) sour cream
- 1 tablespoon vanilla extract
For the Cream Cheese Frosting:
- 8 oz (226g) cream cheese, softened
- 1/2 cup (113g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 teaspoon vanilla extract
Instructions
Make the Cake:
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch (23cm) round cake pan with parchment paper.
- In a medium saucepan over medium heat, combine Guinness and butter. Heat until the butter is melted. Remove from heat and whisk in cocoa powder until smooth. Let cool slightly.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In another bowl, beat the eggs, sour cream, and vanilla extract until smooth.
- Gradually add the Guinness mixture to the egg mixture, whisking until combined.
- Add the dry ingredients and gently fold until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Make the Frosting:
- Beat the cream cheese and butter together until smooth and fluffy.
- Add the powdered sugar and vanilla extract, beating until creamy and well combined.
Assemble the Cake:
- Once the cake is fully cooled, spread the frosting evenly over the top.
