- 1 tbsp olive oil
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup chicken broth or water
- 2 cups baby spinach (or kale)
- 1/2 cup shredded cheese (optional)
- Fresh parsley or cilantro for garnish
Instructions
- Cook the Turkey:
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook until browned, breaking it apart with a spatula.
- Drain excess grease if needed.
- Sauté the Aromatics:
- Add onion and garlic to the skillet. Cook for 2-3 minutes until fragrant.
- Cook the Sweet Potatoes:
- Stir in diced sweet potatoes, bell pepper, salt, pepper, paprika, cumin, and red pepper flakes.
- Pour in chicken broth, cover, and let simmer for 10-15 minutes, stirring occasionally, until sweet potatoes are tender.
- Add Spinach & Cheese:
- Stir in baby spinach and cook for another 2-3 minutes until wilted.
- If using cheese, sprinkle on top and let melt.
- Serve & Enjoy:
- Garnish with fresh parsley or cilantro and serve warm!
