Description

A healthy, flavorful one-pan meal made with lean ground turkey, sweet potatoes, and spices. Perfect for a quick and easy dinner!


Ingredients

  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth or water
  • 2 cups baby spinach (or kale)
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley or cilantro for garnish

Instructions

  • Cook the Turkey:
  • Heat olive oil in a large skillet over medium heat.
  • Add ground turkey and cook until browned, breaking it apart with a spatula.
  • Drain excess grease if needed.
  • Sauté the Aromatics:
  • Add onion and garlic to the skillet. Cook for 2-3 minutes until fragrant.
  • Cook the Sweet Potatoes:
  • Stir in diced sweet potatoes, bell pepper, salt, pepper, paprika, cumin, and red pepper flakes.
  • Pour in chicken broth, cover, and let simmer for 10-15 minutes, stirring occasionally, until sweet potatoes are tender.
  • Add Spinach & Cheese:
  • Stir in baby spinach and cook for another 2-3 minutes until wilted.
  • If using cheese, sprinkle on top and let melt.
  • Serve & Enjoy:
  • Garnish with fresh parsley or cilantro and serve warm!
