1 lb (500g) ground beef (80/20 preferred)

1 small onion, grated

1/4 cup fresh parsley, chopped

1 tsp smoked paprika

1/2 tsp ground cinnamon

1/4 tsp cayenne pepper (optional)

1 tbsp olive oil (for brushing)

Prep Skewers: If using wooden skewers, soak them in water for at least 30 minutes.

Make the Mixture: In a large bowl, combine ground beef, onion, garlic, parsley, cumin, coriander, paprika, cinnamon, cayenne (if using), salt, and pepper. Mix until just combined—don’t overwork the meat.

Form Kebabs: Divide the mixture into 6–8 portions. Shape each portion around a skewer into a long, oval shape, about 5 inches long. Press firmly so it holds together.

Grill Method: Preheat grill to medium-high. Brush kebabs lightly with olive oil. Grill for 8–10 minutes, turning occasionally, until cooked through and nicely charred.

Oven Method: Preheat oven to 425°F (220°C). Place kebabs on a foil-lined baking sheet with a rack. Bake for 18–20 minutes, flipping halfway through, until browned and cooked through.
