Description

These juicy ground beef kebabs are packed with flavor thanks to a mix of herbs, spices, and aromatics. Perfect for grilling or baking in the oven, they’re easy to make and great for a quick weeknight dinner or summer cookout.


Ingredients

  • 1 lb (500g) ground beef (80/20 preferred)

  • 1 small onion, grated

  • 3 cloves garlic, minced

  • 1/4 cup fresh parsley, chopped

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp smoked paprika

  • 1/2 tsp ground cinnamon

  • 1/4 tsp cayenne pepper (optional)

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tbsp olive oil (for brushing)

  • Wooden or metal skewers


Instructions

  1. Prep Skewers: If using wooden skewers, soak them in water for at least 30 minutes.

  2. Make the Mixture: In a large bowl, combine ground beef, onion, garlic, parsley, cumin, coriander, paprika, cinnamon, cayenne (if using), salt, and pepper. Mix until just combined—don’t overwork the meat.

  3. Form Kebabs: Divide the mixture into 6–8 portions. Shape each portion around a skewer into a long, oval shape, about 5 inches long. Press firmly so it holds together.

  4. Grill Method: Preheat grill to medium-high. Brush kebabs lightly with olive oil. Grill for 8–10 minutes, turning occasionally, until cooked through and nicely charred.

  5. Oven Method: Preheat oven to 425°F (220°C). Place kebabs on a foil-lined baking sheet with a rack. Bake for 18–20 minutes, flipping halfway through, until browned and cooked through.

  6. Serve: Let rest for 5 minutes. Serve with rice, pita, salad, or your favorite sauces.


Notes

  • For extra juicy kebabs, avoid using lean ground beef.

  • Add a bit of breadcrumbs if the mixture feels too wet.

  • Try mixing in chopped mint or using ground lamb for variation.

  • Serve with tzatziki, hummus, or garlic sauce for extra flavor.
