This easy grilled zucchini recipe is a quick and healthy summer side dish. Lightly seasoned and grilled to perfection, it’s tender on the inside with those perfect char marks on the outside. A great way to use up fresh zucchini and pair it with just about any meal!
Ingredients

2 medium zucchini

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

1 tablespoon chopped fresh parsley or basil (for garnish)
Instructions

Preheat your grill to medium-high heat.

Slice the zucchini into ¼-inch thick rounds or lengthwise strips.

In a bowl, toss the zucchini slices with olive oil, salt, pepper, and garlic powder if using.

Place zucchini on the grill in a single layer. Grill for 3–4 minutes per side, or until tender with nice grill marks.

Remove from grill and garnish with fresh herbs. Serve warm.

You can also use a grill pan if grilling outdoors isn’t an option.

Add a squeeze of lemon juice or sprinkle with parmesan cheese for extra flavor.
