Description

This easy grilled zucchini recipe is a quick and healthy summer side dish. Lightly seasoned and grilled to perfection, it’s tender on the inside with those perfect char marks on the outside. A great way to use up fresh zucchini and pair it with just about any meal!


Ingredients

  • 2 medium zucchini

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon garlic powder (optional)

  • 1 tablespoon chopped fresh parsley or basil (for garnish)


Instructions

  1. Preheat your grill to medium-high heat.

  2. Slice the zucchini into ¼-inch thick rounds or lengthwise strips.

  3. In a bowl, toss the zucchini slices with olive oil, salt, pepper, and garlic powder if using.

  4. Place zucchini on the grill in a single layer. Grill for 3–4 minutes per side, or until tender with nice grill marks.

  5. Remove from grill and garnish with fresh herbs. Serve warm.


Notes

  • You can also use a grill pan if grilling outdoors isn’t an option.

  • Add a squeeze of lemon juice or sprinkle with parmesan cheese for extra flavor.

  • This recipe also works with yellow squash.
