Ingredients

1 pound large shrimp, peeled and deveined (tails on or off)

2 cups fresh pineapple chunks

1 red bell pepper, cut into 1-inch pieces

1/4 red onion, cut into chunks

2 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon lime zest

2 cloves garlic, minced

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh cilantro or parsley, for garnish

Wooden or metal skewers
Instructions

Soak Skewers (if using wooden):
Soak wooden skewers in water for at least 30 minutes to prevent burning. -
Marinate Shrimp:
In a bowl, mix olive oil, lime juice, lime zest, garlic, paprika, salt, and pepper. Add shrimp and toss to coat. Let marinate for 15–20 minutes. -
Assemble Skewers:
Thread shrimp, pineapple, red pepper, and red onion onto skewers, alternating for color and even grilling. -
Grill:
Preheat grill to medium-high. Place skewers on the grill and cook for 6–8 minutes, turning halfway, until shrimp are opaque and slightly charred. -
Serve:
Garnish with fresh cilantro or parsley and serve warm.
