Description

These grilled shrimp pineapple skewers are the perfect balance of sweet and savory. Juicy shrimp are marinated in a simple garlic-lime sauce, then grilled alongside fresh pineapple for a tropical twist. Perfect for BBQs, light dinners, or appetizers!


Ingredients

  • 1 pound large shrimp, peeled and deveined (tails on or off)

  • 2 cups fresh pineapple chunks

  • 1 red bell pepper, cut into 1-inch pieces

  • 1/4 red onion, cut into chunks

  • 2 tablespoons olive oil

  • 2 tablespoons lime juice

  • 1 teaspoon lime zest

  • 2 cloves garlic, minced

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Fresh cilantro or parsley, for garnish

  • Wooden or metal skewers


Instructions

  1. Soak Skewers (if using wooden):
    Soak wooden skewers in water for at least 30 minutes to prevent burning.

  2. Marinate Shrimp:
    In a bowl, mix olive oil, lime juice, lime zest, garlic, paprika, salt, and pepper. Add shrimp and toss to coat. Let marinate for 15–20 minutes.

  3. Assemble Skewers:
    Thread shrimp, pineapple, red pepper, and red onion onto skewers, alternating for color and even grilling.

  4. Grill:
    Preheat grill to medium-high. Place skewers on the grill and cook for 6–8 minutes, turning halfway, until shrimp are opaque and slightly charred.

  5. Serve:
    Garnish with fresh cilantro or parsley and serve warm.


Notes

  • Don’t overcook the shrimp – they’re done as soon as they turn pink and curl up.

  • You can swap pineapple with mango or peaches for a different fruity twist.

 

  • Serve with coconut rice or a light salad for a complete meal.
