- 3 tbsp fresh lemon juice
- 2 garlic cloves, minced
- 1 tsp lemon zest
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
For the Salmon:
- 4 salmon fillets (about 6 oz each)
- Lemon slices (for garnish)
- Extra chopped herbs (for garnish)
Instructions
-
Make the Marinade:
- In a small bowl, whisk together olive oil, lemon juice, garlic, lemon zest, parsley, dill, salt, black pepper, and red pepper flakes (if using).
-
Marinate the Salmon:
- Place salmon fillets in a shallow dish or a resealable bag.
- Pour the marinade over the salmon, making sure each fillet is well coated.
- Cover and refrigerate for 30 minutes (but no longer than 1 hour to prevent the salmon from becoming too soft).
-
Grill the Salmon:
- Preheat the grill to medium-high heat (about 375-400°F).
- Lightly oil the grill grates to prevent sticking.
- Place salmon skin-side down and grill for 4-5 minutes per side, or until the salmon flakes easily with a fork.
-
Serve:
- Remove from the grill and let rest for 2 minutes.
- Garnish with extra fresh herbs and lemon slices. Serve immediately.
Notes
- No grill? Cook the salmon in a pan over medium heat for the same time or bake at 400°F for 12-15 minutes.
- Use foil on the grill for easy cleanup and to keep the salmon extra moist.
- Pairs well with grilled veggies, quinoa, or a fresh salad!
