  • 1 egg, beaten
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard

  • 1/4 cup red onion, finely chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Prepare the Salmon Burgers:

    • Finely chop the salmon or pulse it in a food processor until coarsely ground.
    • In a large bowl, mix the salmon with panko, egg, mayonnaise, Dijon mustard, lemon juice, parsley, garlic powder, paprika, salt, and pepper.
    • Form the mixture into 4 equal-sized patties and refrigerate for 15–20 minutes to help them firm up.
  • Grill the Burgers:

    • Preheat the grill to medium heat and brush with olive oil.
    • Cook the salmon patties for 4–5 minutes per side or until golden brown and cooked through.
  • Make the Avocado Salsa:

    • In a small bowl, combine avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper. Gently toss to mix.
  • Assemble the Burgers:

    • Toast the burger buns if desired.
    • Place the grilled salmon patty on the bun and top with avocado salsa.
    • Serve immediately and enjoy!

Notes

  • You can substitute panko with almond flour for a low-carb version.
  • These burgers also taste great with a drizzle of sriracha mayo or a slice of cheese.
  • Serve with a side of sweet potato fries or a fresh green salad.
