For the Salmon Burgers:
- 1 1/2 lbs fresh salmon fillets, skin removed
- 1/2 cup panko breadcrumbs
- 1 egg, beaten
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for grilling)
- 4 burger buns
For the Avocado Salsa:
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper

Prepare the Salmon Burgers:
- Finely chop the salmon or pulse it in a food processor until coarsely ground.
- In a large bowl, mix the salmon with panko, egg, mayonnaise, Dijon mustard, lemon juice, parsley, garlic powder, paprika, salt, and pepper.
- Form the mixture into 4 equal-sized patties and refrigerate for 15–20 minutes to help them firm up.

Grill the Burgers:
- Preheat the grill to medium heat and brush with olive oil.
- Cook the salmon patties for 4–5 minutes per side or until golden brown and cooked through.

Make the Avocado Salsa:
- In a small bowl, combine avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper. Gently toss to mix.

Assemble the Burgers:
- Toast the burger buns if desired.
- Place the grilled salmon patty on the bun and top with avocado salsa.
- Serve immediately and enjoy!
Notes
- You can substitute panko with almond flour for a low-carb version.
