These grilled potatoes are crispy on the outside, tender on the inside, and full of smoky, savory flavor. They’re the perfect side dish for summer cookouts or weeknight dinners. Just toss them in olive oil and seasonings, then throw them on the grill!
Ingredients

1 1/2 pounds baby potatoes (red or Yukon gold), halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (optional, for garnish)
Instructions

Preheat your grill to medium-high heat (about 400°F).

In a large bowl, toss the halved potatoes with olive oil, garlic powder, paprika, salt, and pepper until well coated.

Place the potatoes cut side down on the grill, either directly on the grates or in a grill basket.

Grill for 15–20 minutes, turning halfway through, until the potatoes are golden brown and tender when pierced with a fork.

Remove from the grill and garnish with chopped fresh parsley if desired.

Serve hot as a side dish with your favorite grilled meats or veggies.

For even cooking, try to cut the potatoes into uniform sizes.

You can parboil the potatoes for 5–7 minutes before grilling if you want them extra tender inside.
