Description

This Grilled Mediterranean Chicken Salad is a fresh and flavorful dish packed with juicy grilled chicken, crisp veggies, and a zesty homemade dressing. It’s a light yet satisfying meal perfect for lunch or dinner!

For the Chicken Marinade:

  • 2 boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Salad:

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled

For the Dressing:

 

  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken breasts and coat well. Cover and let marinate for at least 30 minutes (or up to 4 hours for more flavor).
  • Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked (internal temperature of 165°F). Let it rest for 5 minutes, then slice.
  • Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, garlic powder, salt, and pepper. Set aside.
  • Assemble the Salad: In a large bowl, combine lettuce, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  • Add Chicken & Dressing: Top the salad with sliced grilled chicken. Drizzle with the dressing and toss to combine.

 

  • Serve: Enjoy immediately!

Notes

  • You can substitute grilled shrimp or tofu for the chicken.
  • For extra crunch, add croutons or toasted pita chips.
