Description

This Grilled Lemon Chicken is marinated in a zesty lemon-garlic mixture, then grilled to perfection for a juicy, flavorful dish. It’s great for meal prep, salads, wraps, or served with your favorite sides!


Ingredients

For the Marinade:

  • 1/4 cup (60ml) olive oil
  • 3 tbsp fresh lemon juice (about 1 lemon)
  • 1 tsp lemon zest
  • 3 cloves garlic, minced
  • 1 tsp dried oregano (or Italian seasoning)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional, for extra flavor)

For the Chicken:

 

  • 4 boneless, skinless chicken breasts (or thighs)
  • Lemon slices, for garnish
  • Fresh parsley, for garnish

Instructions

Marinate the Chicken:

  1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, pepper, and paprika.
  2. Place chicken breasts in a ziplock bag or shallow dish and pour the marinade over them.
  3. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

Grill the Chicken:

  1. Preheat grill to medium-high heat (about 400°F / 200°C). Lightly oil the grates.
  2. Remove chicken from marinade and let excess drip off.
  3. Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (75°C).
  4. Transfer to a plate and let rest for 5 minutes before slicing.

Serve & Enjoy:

 

  1. Garnish with lemon slices and fresh parsley, then serve warm with your favorite sides

Notes

  • No grill? Cook in a grill pan or bake at 400°F (200°C) for 20-25 minutes.
  • Make it spicy: Add ½ tsp red pepper flakes or a dash of hot sauce.

 

  • Great pairings: Serve with roasted vegetables, rice, quinoa, or in a salad.
