For the Marinade:
- 1/4 cup (60ml) olive oil
- 3 tbsp fresh lemon juice (about 1 lemon)
- 1 tsp lemon zest
- 3 cloves garlic, minced
- 1 tsp dried oregano (or Italian seasoning)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional, for extra flavor)
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- Lemon slices, for garnish
- Fresh parsley, for garnish
Instructions
Marinate the Chicken:
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, pepper, and paprika.
- Place chicken breasts in a ziplock bag or shallow dish and pour the marinade over them.
- Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
Grill the Chicken:
- Preheat grill to medium-high heat (about 400°F / 200°C). Lightly oil the grates.
- Remove chicken from marinade and let excess drip off.
- Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (75°C).
- Transfer to a plate and let rest for 5 minutes before slicing.

Notes
- No grill? Cook in a grill pan or bake at 400°F (200°C) for 20-25 minutes.
- Make it spicy: Add ½ tsp red pepper flakes or a dash of hot sauce.
