Description

Grilled Chicken Caprese is a fresh and simple dish that’s perfect for summer. Juicy grilled chicken breasts are topped with melty mozzarella, ripe tomatoes, and fresh basil, then drizzled with balsamic glaze. It’s light, healthy, and full of flavor.

 


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 8 oz fresh mozzarella, sliced

  • 2 medium tomatoes, sliced

  • Fresh basil leaves

 

  • Balsamic glaze (store-bought or homemade)


Instructions

  • Preheat Grill:
    Heat grill to medium-high.

  • Season the Chicken:
    Rub chicken breasts with olive oil, then sprinkle with garlic powder, Italian seasoning, salt, and pepper.

  • Grill Chicken:
    Place chicken on the grill and cook for 6–7 minutes per side, or until internal temperature reaches 165°F.

  • Add Toppings:
    In the last 2–3 minutes of grilling, top each chicken breast with mozzarella slices. Close the lid to help the cheese melt.

 

  • Assemble:
    Remove chicken from the grill. Top with tomato slices and fresh basil. Drizzle with balsamic glaze just before serving.


Notes

  • Use heirloom tomatoes for added flavor and color.

  • For a homemade balsamic glaze, simmer 1/2 cup balsamic vinegar with 1 tablespoon honey until thickened.

  • Great served with grilled veggies, pasta salad, or a bed of arugula.
