Description

This Grilled Cheese Burrito is packed with seasoned ground beef, Mexican rice, nacho cheese, crunchy red strips, and sour cream, all wrapped in a soft flour tortilla. To make it even better, it’s grilled with a crispy, cheesy crust on the outside. It’s the perfect mix of melty, crunchy, and savory flavors, inspired by the famous Taco Bell version!


Ingredients

For the Burrito:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup cooked Mexican rice
  • 1/2 cup nacho cheese sauce
  • 1/2 cup sour cream
  • 1/2 cup crunchy tortilla strips (or crushed tortilla chips)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas

For the Grilled Cheese Outer Layer:

 

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp butter

Instructions

Prepare the Beef:

 

In a skillet over medium heat, cook the ground beef until browned.

Drain excess grease, then add taco seasoning and ½ cup water. Simmer for 5 minutes.

Assemble the Burritos:

 

Lay a large flour tortilla flat.

Spread a spoonful of Mexican rice in the center.

Add seasoned ground beef on top.

Drizzle with nacho cheese sauce and add a dollop of sour cream.

Sprinkle crunchy tortilla strips for texture.

Add shredded cheddar and mozzarella cheese.

Fold the sides of the tortilla inward and roll tightly into a burrito.

Grill the Burritos:

 

Heat a clean skillet or griddle over medium heat.

In a small bowl, mix ½ cup shredded cheddar and ½ cup shredded mozzarella.

Spread a handful of cheese directly onto the skillet in a circle.

Place the burrito seam-side down on top of the cheese and let it grill for 1-2 minutes until the cheese forms a crispy crust.

Flip and grill the other side for an even crunch.

Serve & Enjoy!

 

Remove from heat and let cool slightly before slicing.

Serve with extra sour cream, salsa, or guacamole!


Notes

You can swap ground beef for chicken, steak, or black beans for a different twist.

For extra spice, add jalapeños or hot sauce to the filling.

If you don’t have tortilla strips, crushed Doritos or tortilla chips work great!
