Description

This Grilled Aloha Chicken and Pineapple is a sweet and savory tropical twist on classic grilled chicken. Juicy chicken thighs are marinated in a flavorful blend of soy sauce, pineapple juice, and garlic, then grilled to perfection with caramelized pineapple rings. It’s easy, delicious, and perfect for summer cookouts or weeknight dinners!


Ingredients

  • 4 boneless, skinless chicken thighs

  • 1 cup pineapple juice

  • 1/3 cup low-sodium soy sauce

  • 1/4 cup brown sugar

  • 2 tablespoons ketchup

  • 2 cloves garlic, minced

  • 1 teaspoon grated fresh ginger (or 1/2 tsp ground ginger)

  • 1 tablespoon olive oil

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon red pepper flakes (optional)

  • 1 fresh pineapple, peeled, cored, and cut into rings (or 1 can pineapple rings in juice, drained)

  • Chopped green onions, for garnish (optional)

  • Cooked white rice, for serving


Instructions

  1. In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, olive oil, black pepper, and red pepper flakes (if using).

  2. Place chicken thighs in a large zip-top bag or shallow dish. Pour the marinade over the chicken. Seal and refrigerate for at least 1 hour, or up to 8 hours.

  3. Preheat your grill to medium-high heat. Lightly oil the grates.

  4. Remove chicken from the marinade and grill for 6–7 minutes per side, or until fully cooked and nicely charred.

  5. While the chicken is grilling, add pineapple slices to the grill. Grill for about 2–3 minutes per side until caramelized.

  6. Serve the grilled chicken over rice with grilled pineapple slices. Sprinkle with chopped green onions if desired.


Notes

  • You can substitute chicken breasts if preferred, but adjust the cook time accordingly.

  • For extra flavor, reduce the leftover marinade in a saucepan and drizzle over the cooked chicken (boil it for 5–7 minutes to make it safe).

  • Great for meal prep—store in airtight containers in the fridge for up to 4 days.
