Description

This classic Green Jello Salad is a creamy, fruity, and refreshing side dish or dessert made with lime Jello, crushed pineapple, and whipped topping. It’s a favorite at holidays, potlucks, and family gatherings.


Ingredients

  • 1 (6 oz) package lime Jello (or 2 small boxes)

  • 1 cup boiling water

  • 1 cup cold water

  • 1 (8 oz) can crushed pineapple, drained

  • 1 (8 oz) package cream cheese, softened

  • 1 cup whipped topping (like Cool Whip)

  • Optional: 1/2 cup chopped walnuts or pecans

  • Optional: 1 cup mini marshmallows


Instructions

  1. In a large bowl, dissolve the lime Jello in 1 cup of boiling water.

  2. Stir in 1 cup of cold water and mix until combined.

  3. In a separate bowl, beat the cream cheese until smooth.

  4. Gradually add a little of the Jello mixture to the cream cheese, whisking until smooth and lump-free.

  5. Stir in the drained crushed pineapple.

  6. Fold in the whipped topping until evenly combined.

  7. If using, mix in chopped nuts or marshmallows.

  8. Pour the mixture into a serving dish or mold.

  9. Refrigerate for at least 4 hours, or until set.

  10. Serve chilled.


Notes

  • For extra texture, use cottage cheese in place of cream cheese.

  • Can be made a day ahead for easy prep.

  • You can mold it in a bundt pan for a fun presentation.
