Description

Greek Lemon Rice is a flavorful side dish with fluffy rice cooked in a tangy lemon broth, often served alongside Mediterranean dishes. It’s the perfect balance of zesty citrus and savory seasonings, making it a refreshing addition to any meal.

  • 1 1/2 cups long-grain white rice (or basmati rice)
  • 2 1/2 cups chicken broth (or vegetable broth for a vegetarian version)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Sauté the Onion & Garlic: In a medium saucepan, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another 30 seconds.
  • Add the Rice: Stir in the rice and cook for 1-2 minutes to lightly toast it, making sure it’s well-coated with the oil and onion mixture.
  • Cook the Rice: Pour in the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir everything together and bring to a boil.
  • Simmer: Once it reaches a boil, reduce the heat to low. Cover the saucepan with a lid and simmer for 18-20 minutes or until the rice is cooked and the liquid has been absorbed.
  • Fluff & Serve: Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork. Garnish with fresh parsley and a little more lemon zest, if desired.

  • You can add a pinch of red pepper flakes for a bit of heat.
  • For extra richness, stir in a tablespoon of butter after cooking the rice.
