- 1/2 teaspoon dried oregano

- Sauté the Onion & Garlic: In a medium saucepan, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another 30 seconds.
- Add the Rice: Stir in the rice and cook for 1-2 minutes to lightly toast it, making sure it’s well-coated with the oil and onion mixture.
- Cook the Rice: Pour in the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir everything together and bring to a boil.
- Simmer: Once it reaches a boil, reduce the heat to low. Cover the saucepan with a lid and simmer for 18-20 minutes or until the rice is cooked and the liquid has been absorbed.
- Fluff & Serve: Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork. Garnish with fresh parsley and a little more lemon zest, if desired.
