For the Salad:
-
1 large head romaine lettuce, washed and chopped
-
1 cup croutons (homemade or store-bought)
-
1/4 cup shaved Parmesan cheese
For the Dressing:
-
2 anchovy fillets, finely chopped
-
1 garlic clove, minced
-
1 tsp Dijon mustard
-
1 tsp Worcestershire sauce
-
2 tsp fresh lemon juice
-
1 egg yolk
-
1/2 cup olive oil
-
Salt and black pepper, to taste
-
2 tbsp grated Parmesan cheese
Instructions
-
Make the Dressing:
In a bowl, mash the anchovies and garlic together to form a paste. Add Dijon mustard, Worcestershire sauce, lemon juice, and the egg yolk. Whisk until smooth. -
Add the Oil:
Slowly drizzle in olive oil while whisking constantly until the dressing thickens and emulsifies. Stir in grated Parmesan. Season with salt and pepper to taste. -
Assemble the Salad:
In a large bowl, toss the chopped romaine with the Caesar dressing until evenly coated.
-
Top It Off:
Add croutons and shaved Parmesan cheese on top. Serve immediately.
Notes
-
For extra flavor, toast your own croutons in olive oil with garlic.
-
Add grilled chicken or shrimp to make it a full meal.
-
If you’re concerned about raw egg, use a pasteurized egg or substitute with 1 tbsp mayonnaise.
