These Gluten-Free & Dairy-Free Cookies are soft, chewy, and packed with flavor! Made with simple ingredients and naturally sweetened, they’re perfect for those with food sensitivities while still tasting just as good as classic cookies. Great for snacking, lunchboxes, or a healthy dessert!
Ingredients
1 1/2 cups almond flour (or gluten-free all-purpose flour)
1/2 tsp baking soda
1/2 tsp salt
1/2 cup coconut sugar (or brown sugar)
1/4 cup coconut oil, melted (or dairy-free butter)
1 egg (or flax egg: 1 tbsp flaxseed meal + 3 tbsp water)
1 tsp vanilla extract
1/2 cup dairy-free chocolate chips (or raisins, nuts, etc.)
Instructions
Preheat & Prep:
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
2. Make the Dough:
- In a bowl, whisk together almond flour, baking soda, and salt.
- In a separate bowl, mix coconut sugar, melted coconut oil, egg, and vanilla extract until combined.
- Add the dry ingredients to the wet and stir until a dough forms.
- Fold in chocolate chips (or your preferred mix-ins).
3. Shape & Bake:
- Scoop 1 tbsp-sized balls of dough onto the baking sheet.
- Gently flatten them slightly with your fingers.
- Bake for 10-12 minutes until the edges are golden brown.
4. Cool & Enjoy:
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Enjoy warm or store in an airtight container for up to 5 days.
Notes
Egg-free? Use a flax egg (1 tbsp flaxseed meal + 3 tbsp water).
Nut-free? Swap almond flour for gluten-free oat flour.
Want extra flavor? Add ½ tsp cinnamon or ¼ cup shredded coconut.
