For the Ham:
- 1 (8-10 lb) fully cooked, bone-in ham
- 1 cup water or apple juice (for roasting)
For the Glaze:
- 3/4 cup brown sugar
- 1/2 cup honey or maple syrup
- 2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar or orange juice
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves (or 3–4 whole cloves, optional)
- 1/4 tsp black pepper
Instructions

Preheat & prepare:
- Preheat oven to 325°F (163°C).
- Place the ham in a large roasting pan, cut side down. Add water or apple juice to the pan to keep it moist.

Score the ham:
- Use a sharp knife to make shallow cuts in a crisscross pattern on the surface of the ham. (This helps the glaze soak in!)

Bake the ham:
- Cover loosely with foil and bake for 1 ½ – 2 hours, or 12-15 minutes per pound.

Make the glaze:
- In a small saucepan over medium heat, whisk together brown sugar, honey, mustard, vinegar, cinnamon, cloves, and black pepper.
- Bring to a simmer, stirring often, until the glaze thickens slightly (about 5 minutes). Remove from heat.

Glaze & caramelize:
- Remove foil and brush the ham generously with the glaze.
- Increase oven temperature to 400°F (200°C) and bake uncovered for 15-20 minutes, brushing with glaze every 5 minutes, until golden and caramelized.

Rest & serve:
- Let ham rest for 10-15 minutes before slicing. Serve warm with extra glaze on the side
Notes
Spiral Ham Option: If using a pre-sliced spiral ham, reduce cooking time to 10 minutes per pound and glaze more frequently.
Extra Citrus Flavor: Add orange zest or pineapple juice to the glaze for a fruity twist.
