- 1 large egg

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/4 cup granulated sugar (for rolling)
Instructions
- Preheat the oven: Set to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, beat the butter and brown sugar until light and fluffy. Mix in the molasses, egg, and vanilla.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
- Make the dough: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Form cookie bites: Roll dough into ½-inch balls. Roll each ball in granulated sugar and place on the prepared baking sheet.
- Bake: Bake for 8–10 minutes, until the edges are set but the centers are still soft.
- Cool and serve: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For extra spice, add a pinch of black pepper.
- Drizzle with white chocolate or royal icing for decoration.
- Store in an airtight container for up to a week.
