Description

These roasted cherry tomatoes are bursting with sweet, caramelized flavor, enhanced by garlic, olive oil, and fresh herbs. They’re easy to make and add a delicious pop of flavor to pasta, salads, sandwiches, or as a simple side dish.


Ingredients

  • 2 pints cherry or grape tomatoes (about 4 cups)
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • 1 tsp dried basil (or 1 tbsp fresh)
  • 1/2 tsp balsamic vinegar (optional, for extra depth)
  • 2 tbsp fresh parsley or basil, chopped (for garnish)

Instructions

  1. Preheat Oven:

    • Preheat oven to 400°F (200°C).
  2. Prepare the Tomatoes:

    • Wash and pat dry the cherry tomatoes.
    • Place them in a baking dish or lined baking sheet.
  3. Season the Tomatoes:

    • Drizzle with olive oil and balsamic vinegar (if using).
    • Add garlic, salt, pepper, red pepper flakes, oregano, and basil.
    • Toss to coat evenly.
  4. Roast Until Tender:

    • Roast in the preheated oven for 20-25 minutes, or until the tomatoes start to blister and caramelize.
  5. Finish & Serve:

    • Remove from the oven and sprinkle with fresh parsley or basil.
    • Serve warm as a side dish, toss with pasta, or spread on toasted bread!

Notes

Want extra crispiness? Broil for 2-3 minutes at the end.

Storage Tip: Store leftovers in an airtight container in the fridge for up to 5 days.
