Ingredients

- 2 pints cherry or grape tomatoes (about 4 cups)
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional, for heat)
- 1 tsp dried oregano (or 1 tbsp fresh)
- 1 tsp dried basil (or 1 tbsp fresh)
- 1/2 tsp balsamic vinegar (optional, for extra depth)
- 2 tbsp fresh parsley or basil, chopped (for garnish)
Instructions

Preheat Oven:
- Preheat oven to 400°F (200°C).

Prepare the Tomatoes:
- Wash and pat dry the cherry tomatoes.
- Place them in a baking dish or lined baking sheet.

Season the Tomatoes:
- Drizzle with olive oil and balsamic vinegar (if using).
- Add garlic, salt, pepper, red pepper flakes, oregano, and basil.
- Toss to coat evenly.

Roast Until Tender:
- Roast in the preheated oven for 20-25 minutes, or until the tomatoes start to blister and caramelize.

Finish & Serve:
- Remove from the oven and sprinkle with fresh parsley or basil.
- Serve warm as a side dish, toss with pasta, or spread on toasted bread!
Notes
Want extra crispiness? Broil for 2-3 minutes at the end.
